The Chippy Tour: Gravy, Curry, Salt and Vinegar or Sauce on Fish and Chips?

Updated: Jan 21

Gravy, curry sauce, salt, and vinegar are among the most popular condiments served with fish and chips, especially in British fish and chip shops ("chippies"). Each condiment adds a unique flavour to the dish, catering to diverse tastes and preferences.

Gravy

Composition: Gravy in chippies is usually a brown sauce made from meat drippings, flour, and stock.

Texture and Flavor: It's typically thinner than gravy served with roasts, providing a savoury taste that complements the fried food without overpowering it.

Regional Preference: Gravy is particularly popular in Northern England to accompany fish and chips.

Curry Sauce

Origin: Reflecting the influence of South Asian cuisine in Britain, curry sauce is a recent addition to traditional fish and chips.

Composition: This sauce is typically vegetarian and is made with spices (like turmeric, cumin, and sometimes sweet elements like apples or sultanas).

Texture and Flavor: It's thick and smooth, offering a spicy, tangy, and sometimes sweet flavour.

Salt and Vinegar

Traditional Condiments: Salt and malt vinegar are the most traditional condiments for fish and chips.

Flavour Enhancement: Salt enhances the flavour, while vinegar adds a sharp, tangy taste that cuts through the grease, balancing the flavours.

Popularity: These condiments are widely used across the UK and are often the default choice in many chippies.

Other Sauces

Tartar Sauce: Common in some regions, especially with fish, tartar sauce combines mayonnaise, capers, gherkins, and herbs.

Tomato Ketchup: Popular worldwide, ketchup is a common choice for those who prefer a sweet and tangy tomato flavour.

Dietary and Health Considerations

Vegetarian Options: Curry sauce and vinegar are typically vegetarian. Gravy may not be vegetarian unless specified.

Health Aspects: While these condiments add flavour, they can also contribute additional calories and sodium. Vinegar has the lowest calories, while gravy and curry sauce are higher due to their ingredients.

Cultural and Regional Variations

The choice of condiment often varies by region and personal preference. For instance, curry sauce is more common in areas with a strong South Asian influence.

Choosing gravy, curry sauce, salt, and vinegar in a fish and chip shop is not just about flavour. It reflects the cultural diversity of the UK, personal taste preferences, and regional culinary traditions.

These condiments have become integral to the fish and chips experience, adding depth and variety to this beloved British dish.

My preference is either just salt or curry sauce.
